Honey Roast Peaches

This is the ultimate summer pudding. A glorious combination of fresh peaches, buttery honey sauce topped with cool marscapone cream and toasted almonds.


To serve four hungry guests (or eight slightly more refined guests) you'll need:
4 Peaches, Butter, Honey, 250g Marscapone, 150ml Double cream, 1tsp Vanilla extract, Flaked almonds

Pre-heat your oven to 180C/350F and slice your peaches into halves, removing the stones as you go.


Place the halves into a baking tray and top each with a little knob of butter.



Pop them into the oven for about 20mins. Keep an eye on them to make sure they don't burn. While they're bubbling away, you can make your cream and toast your almonds. In a bowl mix together your marscapone, cream & vanilla. Place to one side or in the refrigerator if you're making it ahead of time. Heat a dry frying pan and when it's good 'n' hot, add your almonds. Flip them around the pan, taking care not to let them burn. When they're nice and brown, tip them out and leave to cool. After 20mins your peaches should be bronzed & bubbling. Remove them from the oven & serve.

For a casual pudding for friends and family I recommend two halves each, for dinner party guests I think one half is probably enough and it looks more refined.


For real summer decadence, enjoy in the garden with a cold glass of champagne.

Butterscotch Milkshakes with Chocolate Peanut Butter Hot Fudge


Milkshakes with chocolate peanut butter fudge sauce….
AND

Butterscotch sauce!


But I did not make these because it’s summer.
No siree, I made them with my dad in mind. He likes milkshakes, but only really good ones. You know the ones from either DQ or the really old-time diner restaurants. Why is that old-time diner restaurants rule? I mean seriously – good burgers, good fries, awesome milkshakes!


Okay, since it is Friday and my brain feels literally fried we’re gonna get right to it today.
Nothing serious and no messing around.

Although, this is a SERIOUS milkshake.

The base of the milkshake is vanilla ice cream blended with some easy homemade butterscotch sauce, a little milk, a little vanilla extract and if you’re into it, a little splash of scotch or whiskey.
Can I just say, the milkshake alone is out of this world!! The butterscotch flavor is insane and SO good. Honestly, if you wanted to stop right there you could. Vanilla ice cream and butterscotch sauce all blender together is just, whoa! So good!

Oh and adding the splash of scotch? That’s pretty good too, very authentic!

So I said you COULD stop there, not you should.
No, you should definitely go on because it gets better



Chocolate peanut butter fudge sauce.
Ah huh. Fudge sauce mixed with peanut butter.


Here’s what you do.
First, you have to make the butterscotch, but I promise it’s so easy and takes only five minutes. Second you gotta make the fudge sauce, but again this is SO easy and can be done all in the microwave or in one pot on the stove.
Next?
Assemble.
You take the fudge sauce and you drizzle it all over your tall glass, then you take the butterscotch sauce and drizzle that all over the inside of your tall glass.
Now?
Blend up that butterscotch milkshake and then…
Layer!
Butterscotch milkshake, fudge sauce, butterscotch sauce, butterscotch milkshake, fudge sauce, butterscotch sauce.
Guzzle.


Chocolate Peanut Butter Hot Fudge Butterscotch Milkshake

Prep Time: 10 minutes
Total Time: 35 minutes

Yield: 2 glasses + extra butterscotch and fudge sauce

Ingredients
Butterscotch Sauce
4 tablespoons (1/2 stick) unsalted butter
1/2 cup packed dark brown sugar
1 teaspoon kosher salt
1/2 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon scotch or whisky (optional)
Peanut Butter Fuge Sauce
1/4 cup butter
1 cup sweetened condensed milk
1/2 cup chocolate chips
1/4 cup peanut butter
1 teaspoon vanilla
Milkshakes
3 cups vanilla ice cream
1/2 cup milk
1/3 cup butterscotch sauce
1 teaspoon vanilla
1 tablespoon scotch or whisky (optional)
peanut butter fudge sauce, for drizzling
Instructions
  1. Make the butterscotch sauce. Melt the butter in a small sauce pot. Add the brown sugar, heavy cream and salt. Bring to a boil and then reduce heat to medium. Boil for 3 to 4 minutes. Remove from heat and stir in the vanilla and scotch, if using.
  2. Place 2 tall glasses in the freezer.
  3. To make the ice cream, take the blender jar and add 1/3 cup of the butterscotch sauce (let the rest sit on the counter for later), 1/2 cup of milk (start with less if you like really thick milkshakes), 1 teaspoon vanilla and 1 tablespoon of scotch or whisky (if desired). Place the blender jar in the freezer. Then scoop out 3 cups of the vanilla ice cream and place it in another bowl. Place the ice cream back in the freezer. Freeze both the ice cream and the ingredients in the blender jar for at least 20 to 30 minutes.
  4. While the ice cream freezes make the peanut butter fudge sauce. In a microwave safe bowl add the butter, sweetened condensed milk, peanut butter and chocolate chips. Microwave for 30 seconds, stir and microwave another 30 seconds, stir and if needed microwave another 30 seconds. Once everything is melted and combined together stir in the vanilla. Set aside.
  5. When ready to serve, remove the two glass from the freezer and add the warm hot fudge sauce to the bottom of each glass, then add a drizzle of the butterscotch sauce.
  6. Remove the ice cream and the blender jar from the freezer. Add half of the ice cream to the blender and blend on high until smooth. Add the remaining ice cream and blend until chunky or smooth (your call). Layer the milkshake in the glasses with the butterscotch sauce and the peanut butter fudge sauce. Serve immediately.

Cherry-Blueberry Summer Cheesecake


For a while friends have been asking me for a good and easy (no bake) cheesecake recipe so here we go! It's based on a recipe my mum used to make (on the very rare occasions she ever made a cake) and I tweaked it a little bit over the years.

I usually make this cheesecake with lemons (I'm going to post that recipe sometime soon ;)) but now that summer is here why not go with cherry and blueberry? It's 'no bake' and easy to make, it just needs enough time to refrigerate, so if you think about making this cake, it's best to make it the night before.


INGREDIENTS:
(for a 6 inch or 8 inch cake)

2 cups / 150 g vanilla wafers (or digestive cookies)

1/2 stick of butter
16oz  / 500g (2 packs) cream cheese
1 cup drained greek yogurt
1 cup powdered sugar
0.5 cups pureed blueberries
0.5 cups pureed cherries
For the meringue:
1 egg white
30g sugar

I used a 6 inch x 3 inch cheesecake pan because I like tall cakes, I just think it looks prettier. But you can use an 8 inch pan or an even bigger one and just make a flatter cake. I suggest lining the pan with parchment paper on the sides so the cake is easier to remove from the pan once its ready.


I like to top the cake with meringue and some fresh berries: Beat the egg white to soft peaks. Then add the sugar teaspoon by teaspoon every 30 seconds while beating. Once all your sugar is incorporated, keep beating on medium high speed for 5 minutes.

Spread the meringue on your cake, top with berries and serve!
